The Duchess of Sussex, Meghan Markle has always been a huge foodie. Long before she became part of the Royal family, the former actress would often flood her now-deleted Instagram feed with tons of food pics. Meghan is also very much active in the kitchen. In her now-deleted food and lifestyle blog, The Tig, the Duchess would often share recipes she made at home. We did some digging through The Tig archives and found this phenomenal recipe for pumpkin fondue that is sure to complete your Thanksgiving dinner this week. According to Meghan herself, this is her, “favorite recipe of all time.” The Duchess would often feature a quick write-up about why she loved a particular recipe before featuring it on her blog. Check out this excerpt originally posted on The Tig, October 20th, 2015:
“I am going to go out on a limb here and say that this may be my favorite recipe of all time. A bold statement, indeed. Why, you ask? Because itâ€
Ingredients:
- 1 Pumpkin, approx. 4lbs.
- 14″ Baguette cut into 1/4 inch slices, lightly toasted
- 1/4 lb. Gruyere cheese, grated
- 1 3/4 cup half & half
- 2 large eggs
- 1 1/2 tsp. kosher salt
- 1 tsp. freshly ground pepper
- 1/4 tsp. nutmeg
Directions:
- Preheat the oven to 350 degrees.
- Carefully cut a 1-inch slice off the top of the pumpkin. Reserving the top, scoop out and discard the seeds and strings.
- Make 3 layers each of the toast and cheese in the pumpkin cavity, alternating layers and ending with cheese.
- Whisk together the half and half, eggs, salt, pepper and nutmeg and slowly pour the mixture into the pumpkin.
- Replace the top of the pumpkin and bake on a shallow baking pan in the middle of the oven until the pumpkin is tender, about 2 hours.
- Serve by scooping out the pumpkin flesh with the bread and cheese. Serves 4.
